How to Make Chocolate Truffles
Shelley shows us how to make Chocolate Truffles and flavor them to your liking. They also make great holiday gifts! Chocolate Truffles Yield: 3 dozen Active time: 30 minutes Start to finish: 2 hours 1 cup heavy whipping cream 10 ounces best quality semi- or bittersweet chocolate (we recommend Callebaut or Scharffenberger), chopped 1-2 tablespoons liqueur (suggestions: Grand Marnier, Chambord, Frangelico, Kahlua, or rum) Your choice of coatings: cocoa powder, powdered sugar, chopped nuts, toasted coconut, cookie crumbs or crushed candy canes 1. Heat the cream in a small saucepan until it just begins to simmer. Remove from heat. 2. Add the chocolate to the hot cream. Let sit for 1 minute, and then add the liqueur and whisk until smooth. 3. Pour the ganache into a shallow dish, and chill until fully set, 1-2 hours. 4. Use a small scoop to portion ganache, and quickly roll between your hands into balls. (Wearing gloves will help protect the ganache from the heat of your hands, and also keep your hands clean!) 5. Put cocoa or other coating in a small bowl and roll truffles to coat. 6. Place on a parchment-lined sheet pan and keep chilled until served.

Taste Of Archstone- A look inside making Truffles
Taste of Archstone Contest- I live at Archstone CIty Place in Downtown Long Beach PLEASE CLICK "LIKE" for me from Sept 16th-25th! any questions about how to make truffles, please write a comment and I will reply! Chocolate Truffles: 11oz ~1 3/4 cups dark chocolate 3.5oz ~little less than 1/2 cup heavy cream 3.5oz or 7tbsp unsalted butter 1oz liqueur- i used grand marnier toppings 12oz melted dark chocolate toasted coconut dutch process cocoa toasted hazelnuts, pecans, almonds- finely chopped chop dark chocolate and bring heavy cream to boil. pour cream over chocolate and let sit a few minutes to help the chocolate melt. begin stirring slowly until the chocolate is melted, then add the butter in small amounts until it's incorporated. next add the grand marnier. pour the mixture into a dish and let sit room temp for 2hrs until firm enough to roll into balls. you can use a melon baller or pastry bag to make the truffles. once they're all made, throw them in the fridge or freezer until they're cold and set up. you can always make them rounder once theyre cold. while truffles are chilling, prep you other ingredients- begin melting your 12oz of chocolate and set up a few small bowls for your toppings. it's helpful to have 2 people- one to roll the truffle in chocolate, the other person can roll them into the toppings. once all of them are coated in chocolate and rolled in toppings, refrigerate for 20-30mins until cold. can be stored for a week in the fridge

Champagne Truffles
The first solid chocolate bar is believed to have been produced and put on sale in 1847 by Fry & Sons of Bristol, England. It was in 1875 that a Swiss manufacturer, Daniel Peters, discovered how to blend chocolate with powdered milk. Chocolate Truffles
Dark Chocolate: 1 cup light cream 2 tbsp unsalted butter 8 oz bittersweet chocolate 8 oz semisweet chocolate 2 tbsp liqueur (optional) Heat cream and butter in saucepan over medium heat. Stir the butter into the cream when it melts, and bring to a boil. Remove from heat and add in the bittersweet, and semisweet chocolate. Stir until the mixture is smooth. Stir in liqueur if desired. Spread thinly over a piece of wax-paper on a cookie sheet. Refrigerate for two hours to harden. White chocolate: 6 oz white chocolate 5 tbsp unsalted butter 3 tbsp heavy cream 1/2 tsp orange liqueur Melt white chocolate, butter, and cream in a double boiler. Remove from heat and let cool. Add liqueur if desired. Cover and refrigerate of two hours. Outer coatings: 2 tbsp cocoa powder 1 tbsp powered sugar Pralines Chocolate sprinkles Mix cocoa powder and sugar together in a small bowl. Spread out Pralines on a small plate Spread out chocolate sprinkles on a small plate. Once the chocolate has hardened. Shape into spheres and roll each of them in one of the three coverings. Keep covered in a refrigerator for up to two weeks.

I Can Taste The Liqueur! -- Experiencing Godiva Liqueur Truffles
I splurged on a box of Godiva Liqueur Truffles on a shopping trip today. The lady said that if I spend or more, I get a free chocolate-covered strawberry, so I immediately grabbed the box. She explained the detailes of the truffles to me (ALCOHOL CONTENT)! I asked her if I needed to show ID to buy the chocolates, and she said no. Transaction completed, I was very eager to show Crane the delicious investment I had made. (Which was exactly .40. This better be good!)
