Chocolate Truffles: 11oz ~1 3/4 cups dark chocolate 3.5oz ~little less than 1/2 cup heavy cream 3.5oz or 7tbsp unsalted butter 1oz liqueur- i used grand marnier toppings 12oz melted dark chocolate toasted coconut dutch process cocoa toasted hazelnuts, pecans, almonds- finely chopped chop dark chocolate and bring heavy cream to boil. pour cream over chocolate and let sit a few minutes to help the chocolate melt. begin stirring slowly until the chocolate is melted, then add the butter in small amounts until it's incorporated. next add the grand marnier. pour the mixture into a dish and let sit room temp for 2hrs until firm enough to roll into balls. you can use a melon baller or pastry bag to make the truffles. once they're all made, throw them in the fridge or freezer until they're cold and set up. you can always make them rounder once theyre cold. while truffles are chilling, prep you other ingredients- begin melting your 12oz of chocolate and set up a few small bowls for your toppings. it's helpful to have 2 people- one to roll the truffle in chocolate, the other person can roll them into the toppings. once all of them are coated in chocolate and rolled in toppings, refrigerate for 20-30mins until cold. can be stored for a week in the fridge
