Christmas Sweets

Merry Christmas! Happy Holidays! Come one, come all! Yes, it is the cooking season, I mean holiday season, so get ready to get your money's worth out of your kitchen this Christmas with cooking your feasts for your family.

Everyone looks transmit to the feast, but what I look transmit to most is the obscene whole of sweets and pastry that will be settled in front of me and the diminutive restraint that I must show towards them.

Premium Chocolate Amaretto Pecans (32 ounces) Overview

We start with premium pecans from the finest orchards and carefully roast them to perfection. Next we let it cool overnight. Then we load them in a chocolate pan, drizzling them with our special recipe chocolate amaretto sauce as the drum turns. This takes about 1-1/2 hours and requires exacting work. Once a thick chocolate layering has been added, we load the entire batch into a ribbed finishing pan for another 1/2 hour to give these nuts their glossy finish. We end up with a truly unique product - gourmet chocolate amaretto pecans!

Brownie Bonbons

For manufacture the exquisite brownie "bonbons" you need a box of brownie mix (the more chocolately the better) and a half a cup of crushed candy canes. The first step is to make the brownies, just like any brownies before. Take them out of the oven a diminutive before they are done and roll them into small balls. Then crush up the candy canes and roll the brownie balls into the candy canes, fully coating them. Let them cool and then serve!

Candied Orange Peels

To make candied orange peels you need the peels of three large oranges, a cup of water, two table spoons of corn syrup, and 3 cups of sugar. First take your peels and cut them into strips, about a quarter inch wide. Then boil a pot of water with the corn syrup, and sugar until fully dissolved. Simmer the orange peels for forty minutes, then let cool on a cookie sheet, and wait for them to cool. Enjoy!

Choco-Cherry Truffles

Just the word truffle makes me start to drool. Truffles are one of those foods that everyone loves, so you won't go wrong if you conclude to try this recipe. Melt the semisweet chocolate in with the milk and salt in a saucepan (watch carefully as it tends to burn). Next, stir in the liquor, cherries, and nuts. Allow this aggregate to cool and put in the refrigerator for at least an hour. The next part requires you to scoop out balls of chocolate. Then cover these balls of chocolate with melted white chocolate and sprinkles.

Shelley shows us how to make Chocolate Truffles and flavor them to your liking. They also make great holiday gifts! Chocolate Truffles Yield: 3 dozen Active time: 30 minutes Start to finish: 2 hours 1 cup heavy whipping cream 10 ounces best quality semi- or bittersweet chocolate (we recommend Callebaut or Scharffenberger), chopped 1-2 tablespoons liqueur (suggestions: Grand Marnier, Chambord, Frangelico, Kahlua, or rum) Your choice of coatings: cocoa powder, powdered sugar, chopped nuts, toasted coconut, cookie crumbs or crushed candy canes 1. Heat the cream in a small saucepan until it just begins to simmer. Remove from heat. 2. Add the chocolate to the hot cream. Let sit for 1 minute, and then add the liqueur and whisk until smooth. 3. Pour the ganache into a shallow dish, and chill until fully set, 1-2 hours. 4. Use a small scoop to portion ganache, and quickly roll between your hands into balls. (Wearing gloves will help protect the ganache from the heat of your hands, and also keep your hands clean!) 5. Put cocoa or other coating in a small bowl and roll truffles to coat. 6. Place on a parchment-lined sheet pan and keep chilled until served.
